OMG I've made a new dish! Butternut squash & chestnut red Thai curry! YUM. It goes well with pilau rice & spinach! You need to boil the squash first. I add 2 cardamoms, 2 cloves, pinch of cinnamon & nutmeg, salt & pepper. I do this because I save half the squash chilled in the fridge for a salad the next day. So if you are cooking the whole squash the spices are not needed. I use vacuum packed pre-cooked chestnuts for easy prep. Bung them in a ready made red curry base or make a fresh one. There are plenty of pilau rice & red Thai curry recipes online. I just don't want to clog this thread up with too many cooking classes! Just veggie dishes that break away from the norm. xxx

Butternut Squash & Chestnut Red Thai CurryI made a wikkle recipe Serves between 2 and 4 people depends how hungry/greedy you are Prep and cook time about 30-40mins Ingredients: 1 butternut squash peeled & diced big chunks 10 or more chestnuts cooked and peeled (Waitrose do vacuum packed fresh ones!) 1 red onion diced big chunks (white or some shallots ok as alternative) 4 Big tomatoes big chunks 2 Tablespoons red palm oil/coconut oil (or a choice of your own favourite, please dont use vegetable oil...it's pants. 1 Tablespoon coriander powder 1 Huge dollop of red thai curry paste 1 Huge dollop peanut butter (crunchy or smooth) 5-7 Tablespoons single cream 3 cloves garlic chopped 1 whole red chilli sliced finely 1 Tablespoon grated frozen ginger 2 Vegetable stock cubes crumbly ones A few handfuls fresh spinach Boil the diced BUTTERNUT SQUASH until tender, not too mushy watch this stuff because it goes mushy quickly. Drain off hot water and add OIL, GARLIC, CHILLI, CORIANDER POWDER,STOCK CUBES, THAI CURRY PASTE & GRATED GINGER & ONION Mix it up a bit with a big wooden spoon Add CHESTNUTS, TOMATOES mix a bit more Add CREAM & PEANUT BUTTER mix a bit more Add SPINACH then simmer on low heat for about 10 minutes and check to make sure it doesn't stick (I do because I cook with steel and iron) If the curry is dry you can add a cup of water as the ingredients are potent enough to take a bit of watering down. Voila! Accompany with fragrant rice or a nice bread of your choice, what ever you fancy.

My Scones!
Here's the recipe, I was taught this a cookery class in school (very good long term memory) and always remember the gorgeous smells there! Mmmmm! This will make your home smell amazing! Screw the Yankee Candles! Recipe: 8oz flour (self raising) 2oz butter or soya margarine 2oz white sugar 1 egg a little drop of milk or any alternative dairy drink Optional:2-3 tablespoons of moist dried fruit any choice or jam/jelly/compote 1 table spoon cinnamon 1 tablespoon frozen fresh grated ginger (freezing it makes it easier and finer to grate) or powdered ginger is ok Method of madness:Rub marg/butter into the flour. (if you do not know how to do this... shame on you and ask your mother what to do or go to youtube for answers or start bakery classes!) Add sugar and spice and all things nice (including fruit if you have it)Stir and mix nicely. Plop the egg into a cup and beat it, just beat it, beat it, just beat it (sorry)Start adding the egg bit my slimy bit into the mixture you created and mix well. The stuff will begin to clump. Add a very tiny amount of milk to the cup and swill the rest of the egg around from the sides (I do this to get as much egg into the mixture)Add a very tiny amount to your mixture and continue to stir until the mixture becomes a ball of dough that sticks together. DO NOT add too much milk at once because the dough will be too sticky and then you end up adding flour to dry it down! Dust your work top with flour (which you already cleaned properly before as to not get E-Coli, C-Difficile, Foot & Mouth, Black Plague etc. from it after the cat decided to breakdance on there and lick his bum or something)Cut the dough in 2 balls (just easier to work with - nothing to do with duality cosmological philosophy, Yin & Yang, Ping & Pong etc)You can create 3 inch patties and cut them to create wedges or roll a sausage shape and cut 3 inch thick slices. Flour your knife to help cut without sticky situations! Now, if you have no dried fruit in them, you can place some jam (UK) Jelly (USA - CAN) Compote (Posh - EU) in the centre of your scones before you bake them. Create a wikkle hole about 1 inch deep in the centre of them and fill. Don't over fill as this stuff will ooze everywhere when heated in the oven! Bake on GAS 4 - 150 C - 300 F for 15 minutes Voila! Serve with cream if you wish, keep them in a cookie/biscuit tin once cooled. They are best when hot from the oven!

Simple and sweet! Something I couldn't match myself with LOL I enjoy posting recipes on here to share with yers all but I want to bring it right back to Vegetarianism and Veganism and why do people choose this dietary lifestyle. I do not advocate myself as a "pushy vegetarian hippie" (practically vegan apart from certified checked free range eggs that come from farms that don't kill the male chickens or pass them on to be so - this is a hard find) How many of you know the story of how the product reached your shopping basket from the beginning? I bet you would never even walk down the meat isle ever again.

I appear to becoming a bit of a campaigner on this thread!
This will make the thinkers look at the way we are made to eat on this planet a very unnatural and wrong thing to do. Meat and dairy being stuffed down our faces is the worst thing ever. We do have choices. Habit, indoctrination and convenience see us to an early grave and the animals that suffer, not early enough.
This is NOT one of those horrible shocking videos. It's a very informative and often funny lecture by Dr Michael Klaper. I hope you can take the time to watch it.

I know there's only me posting on here but I always try to spread info around about veganism and vegetarianism where I can.
Most of you won't give this a second look but if you feel drawn to this, be prepared with tissues and maybe even someone on hand to hug you. The narration is beautiful and well written. It's the truth so please don't turn away if you are strong enough.

I'm not a vegan, merely a pescetarian but i will watch that first video when i get time but i'm not going to force myself to watch the distressing one. I saw one only recently abou the cruelty and mistreatment of animals in slaughter houses and i nearly got sick watching it. I'm happy with my current diet, i try to eat as healthy as possible and salads are one of my favourite things- as well as roast veg. I don't eat butter and rarely have cheese. I usually use soy milk now as well.

Wow, I wish I had had this for supper instead of what I did have. This looks absolutely delicious, Shamrocks! I always say I could never go veggie, but my gosh, there are so many yummy looking dishes that make me consider it!

Oooh that's lovely to hear Cait Well being veg/vegan causes you to be more creative with food as well as healthy. All those yummy fresh herbs & things! ;D If you are interested about the dietary side of it, the video above with Dr Klaper is well worth watching, a great myth buster and great advice. That sounds good Zombz! Come back please do!
